Summer is at its peak, and so is the abundance of fresh, colorful vegetables! That’s why August is the perfect time to take on a fun and rewarding Vegetable Challenge—30 days of packing more veggies into your meals, discovering new favorites, and giving your body a serious nutrient boost.
Why Take the Challenge?
Let’s face it—most of us think we eat enough vegetables, but when you actually track it, those servings can come up short. Vegetables are the triple win. 1. Loaded with vitamins and minerals. 2. They have tons of fiber and 3. They are relatively low in calorie. That's a triple win. Whether you’re trying to feel more energized, eat more mindfully, or simply mix up your meals, this challenge is for you.
How It Works
From August 1st to August 31st, commit to eating at least 5 servings of vegetables per day. Here’s how you can make it happen:
Eat the rainbow – Aim for different colors throughout the week. Each color brings different health benefits.
Try something new each week – Ever cooked kohlrabi? Roasted radishes? This is your time!
Sneak veggies into every meal – Yes, even breakfast! (Think spinach in smoothies or zucchini in meatloaf.)

To keep things interesting, I’ve broken it down into weekly veggie spotlights:
Week 1: Leafy Greens – kale, spinach, arugula, swiss chard
Week 2: Cruciferous Crunch – broccoli, cauliflower, Brussels sprouts
Week 3: Root Revival – carrots, beets, radishes, sweet potatoes
Week 4: Seasonal Stars – zucchini, tomatoes, cucumbers, eggplant
