A few weeks ago I was sent this recipe for Strawberry Salsa. It looked so good I've been saving it until I had some strawberries. Yesterday I finally had enough from the garden to make a batch. You need to try this.
Strawberry Salsa
- 1 pint fresh strawberries, hulled and diced
- 1 jalapeños, deseeded and diced
- ½ cup diced red onion
- 2 teaspoons honey
- ½ cup cilantro, chopped
- Juice of one lime
- pinch of sea salt
- pinch of black pepper, or to taste
Yeppers, all you need to do is stir this up and set it in the fridge to chill.
The question is what to put it on besides tortilla chips?
Here's some ideas:
- Use it as a condiment to tie together Grilled chicken and sliced tomatoes & cucumbers.
- Serve it alongside scrambled eggs
- Add it on top of your favorite Fish Taco recipe
I made a few changes to the original recipe. I used jalapeños I had canned last year. Fresh Jalapeños would have added a nice crunch. I also used a mix of green onion and white onion to add color instead of red onion.
