I just made a batch of Summer Salsa. What does this have to do with Cr8 Fitness turning 15? I'm not quite sure except it helps me get in 5 different veggies in one day. June's challenge like our other challenges in 2023 include a healthy eating aspect. May's challenge was to eat 15 different veggies at some point throughout the month. It proved more difficult than most of us initially thought. Our second challenge was to go 15 days without snacking. That just about pushed most of us over the edge.

Let's change the Challenge up a bit and help us all go into the summer feeling successful.
Cr8 Fitness's 15 year June Challenge:
- 15 Days eating at least 5 different vegetables - I tweaked the challenge a bit. Your goal is to have 15 days during the month where your meals give you at least 5 different vegetables. Use the recipe below to help you out.
- 15 Days with snacks that are only healthy in nature - Over and over I heard; "I had a snack but it was healthy". I even said I usually snack on cherry tomatoes or cucumber slices. Its the days we grabbed chips, or popcorn or ice cream for snacks that throw us off the healthy eating train.
Jump on board. Be prepared because we are going to tackle these challenges head on. I've got you started with this recipe. You'll find many more on the website. Vegetable Fettucine, Rainbow Chicken, and more crowd pleasing meals are just a few that will keep you eating at least 5 different vegetables a day.
Summer Salsa
- 1 cucumber (diced)
- 1 tomato (diced or chopped)
- ½ onion (chopped)
- ½ cup chopped fresh parsley or cilantro
- ¼ to ½ teaspoon diced jarred jalapenos (optional)
Toss all the ingredients in a bowl, mix and eat!
It says jalapenos are optional but I don't think so.
