Watermelon and Microgreens Salad
Watermelon and Papa Dean's Microgreens
1 cup watermelon
2 Tablespoons feta cheese
1 large fistful of Papa Dean's Spicy Mix Microgreens
1 Tablespoon Balsamic Vinegar
Lay the greens in your bowl, add the watermelon and cheese, drizzle the balsamic vinegar on top. Enjoy
- Juice and zest of 1 lime
- 1 tablespoon olive oil1
- small watermelon, cut into 1" thick wedges
- Freshly torn mint leaves, for serving
- Flaky sea salt, for serving
Heat grill or grill pan to medium heat. In a medium bowl, whisk together lime juice, zest and olive oil.
Brush lime juice mixture all over watermelon wedges and place on grill. Cook until grill marks form and fruit softens slightly, about 2 minutes per side.
Sprinkle with mint and flaky sea salt and serve.
My kids love Watermelon Pops
Watermelon Pops
- 4 cups diced seedless watermelon
- Store bought popsicle containers
- 2 Tablespoon raspberries or blueberries, optional
Put watermelon in your blender and mix until smooth consistency. Pour the watermelon mixture in your popsicle containers. For color add a few berries into each pop, cover and freeze for several hours.
Super easy and fun to make. Kids love them!
Grill up some chicken or steak or burgers to go along with all your watermelon.
