Its no secret that I love salads. Usually once a week, our dinner meals is a salad with all kinds of wonderful toppings. The salad dressing you top off a sensational salad is key to taking it from average to 'Wow, this is really good Mom'.
Here is my latest favorite salad dressing. It reminds me during the cold months of March that Summer is right around the corner.
Lemon Poppy Seed Dressing
- 3/4 cup olive oil
- 1/4 cup lemon juice, fresh squeezed
- 1 Tbsp mustard
- 1/2 Tbsp honey
- 1 Tbsp poppy seeds
Put everything into a jar and blend with an immersion blender, or shake vigorously. You can also use a food processor or a blender to get a good emulsion, too, but an immersion blender is the easiest. Taste to adjust any of the ingredients.Store covered in the refrigerator for up to 2 weeks.
We serve all our salads using Papa Dean's Microgreens. I might be a bit bias but they really are good because they add flavor to the salad instead of being something tasteless that fills the salad bowl.
