Cr8 Fitness's Fresh Start Nutrition Challenge is in its second week. Those in the challenge are enjoying Salmon Burgers with Mango Salsa tonight. The salsa recipe is so delicious I had to share it with everyone. 

Mango Salsa

  • 2 mangos, peeled and diced
  • 1 red onion, peeled and diced
  • 2 kiwi, peeled and diced
  • 1 jalapeno, seeds removed and minced
  • 1 red pepper, seeds removed, diced
  • 1 avocado, peeled and diced
  • 1 tomato, diced
  • juice of 1 lime
  • bunch of cilanatro, chopped
  • 1/2 teaspoon sea salt
  • Mix ingredients in a bowl and refrigerate for 2 hours. Serve.

    Everyone in the challenge is going to enjoy this salsa alongside a salmon burger. It is also fantastic on fish tacos, on top of salad greens, or a a dip for whatever works well to scoop up this deliciousness. I'll enjoy some of the extra salsa leftover because it makes a ton mixed with Papa Deans Microgreens.
